A great recipe for a summer breakfast!!!
Suprise Muffins
2 eggs
3/4 cup milk
1/3 cup salad oil
2 cups flour
3/4 cup sugar
1 tablespoon baking powder
3/4 teaspoon salt
4 tablespoons jelly
Preheat oven to 400 degrees. Grease 12 muffin cups. Beat egg with
a fork; add milk and oil. Stir. Measure and sift together flour, sugar
baking powder and salt. Add dry ingredients to wet ingredients.
Mix just until flour is moistened. Batter should be lumpy. Fill cups
only 1/3 full; drop 1 teaspoon jelly in center of each. Add the rest
of batter to fill cups 2/3 full. Bake 20 - 25 min. or until golden brown.
Remove muffins from cups immediately. Makes 12.
Serve with fresh wedge of mellon.
