This is always a favorite!! Just like being at the FAIR
Carnival Funnel Cakes
3 eggs well beaten
2 cups milk
4 cups sifted all-purpose flour
1/3 cup sugar
1/2 teaspoon baking powder
Fat or oil for deep frying
Confectioners sugar
Beat eggs with milk and gradually beat in flour, sugar, salt, and
baking powder. Beat until very smooth. Holding the opening of a funnel
closed, fill the funnel with batter. Open the end of the funnel and
allow dough to run out in a stream into deep hot fat. Move the funnel
to make a pattern, starting at the center of the pan and swirling
batter outward in a circle. Fry for 2 to 3 min. or until brown.
Drain on absorbent paper and sprinkle with confectioners sugar.
Makes about 30 cakes.
