Pick - a - Veggie Pizza

Large flour Tortillas ( we used Azteca)
Mushrooms (chopped)
Monterey Jack Cheese (shredded)
Fresh spinach (chopped)
Options: add Broccoli flowerettes (very small)
              or Chopped Shallots or Onions
               or Try an equal mix of Monterey Jack and Mozzerella

Place the Tortilla in a fry pan and heat about 10 seconds on each side.

Place the Tortilla on a very lightly sprayed (PAM) Pizza Pan.

Brush the top with a vinagrette ( or Italian dressing).

Saute the chopped mushrooms and place on top.

Sprinkle on the shredded Monterey Jack Cheese.

Sprinkle the chopped spinach with a small amount of Balsamic Vinegar and saute for 1 minute. Add to top
of Pizza.

Bake at 400 degrees until cheese melts - about 9 - 10 minutes.

Serves 2 as appetizer or 1 as a luncheon
