Mon. Mar. 2, 1998      Irish Soda Bread

  2   cups all-purpose flour
  1   teaspoon baking powder
  1/2 teaspoon baking soda
  3 tablespoons butter
  1  beaten egg
  3/4 cup buttermilk
  1 beaten egg
            ( for Sweet-Currant loaf,! add 2 tablespoons brown sugar to the flour mix, and
              1/3 cup currants to the buttermilk mixture)

  In a bowl combine flour, baking powder, baking soda, and 1/4 teaspoon salt. Cut in butter
until mixture resembles coarse crumbs. Combine 1 egg and buttermilk; add to flour mixture. Stir just till moistened. On a lightly floured surface, knead gently for 12 strokes.
On a greased baking sheet, shape dough into a 6-inch round loaf. Cut a 4-inch cross,
1/4 inch deep, on the top. Brush with 1 beaten egg. Bake in a 375 degree oven about
35 minutes or till golden brown. Cool on a rack. Serves 16
